Buckwheat Galettes
or savory Crepes

In Brittany, France, the savory crêpes are called Galettes, they are made with Buckwheat flour which make them naturally Gluten Free! It's a tasty and gluten-free alternative to a traditional wheat crêpe.

The crêpe is a very thin cooked pancake, whipped on a hot "billig" (crêpe maker) and spread evenly and efficiently with a "rozell" (a T-shaped crêpe spreader).
Common savory Galettes fillings served for lunch or dinner are cheeses, veggies, eggs,
and various meat products. The fillings are commonly added to the center of the crêpe and served with the edges partially folded over the center.
